A comforting vegan twist on the classic stroganoff combined with creamy mac and cheese. This dish is packed with savory mushroom flavor and creamy goodness, making it a satisfying and hearty meal for any occasion.
Ingredients: 16 oz macaroni pasta. 2 cups sliced mushrooms. 1 onion, diced. 4 cloves garlic, minced. 3 tbsp olive oil. 3 tbsp all-purpose flour. 3 cups vegetable broth. 1 cup unsweetened non-dairy milk. 1 cup vegan sour cream. 1 tbsp soy sauce. 1 tsp paprika. Salt and pepper to taste. Fresh parsley, chopped for garnish.
Instructions: As directed on the package, cook the macaroni. Once done, drain it and set it aside. Warm up the olive oil in a big pan over medium-low heat. Put in garlic, onions, and mushrooms. Cook until the mushrooms turn brown and the onions become clear. Put some flour on top of the mushrooms and mix them in well. Add vegetable broth slowly while stirring all the time to avoid lumps. Soy sauce, paprika, salt, and pepper should then be added along with non-dairy milk. As you stir, the sauce will get thicker. Toss the cooked macaroni in the pan with the sauce until it is well covered. Allow the flavors to blend for another two to three minutes. Serve hot with fresh parsley on top. Have fun with your vegan Stroganoff Mac and Cheese!

Instructions: Cook pasta according to package instructions. In a large skillet, heat olive oil over medium heat. Add onion and garlic, saut until softened, about 3 minutes. Add mushrooms and cook until they release their liquid and start to brown, about 5-7 minutes. Sprinkle flour over the mushrooms and stir to coat. Gradually add vegetable broth, stirring constantly until the mixture thickens. Stir in soy sauce and vegan sour cream. Season with salt and pepper to taste. Serve mushroom stroganoff over cooked fettuccine pasta. Garnish with chopped parsley.

Seitan, onions and peppers. I ended up making the vegan version of beef stroganoff using Daiya cheeses and soy milk, and put it on a bed of hidden veggie ziti. Was so yummy I forgot to take a photo before we ate that shit up! I remembered after we were sitting back talking about how I made it. The only thing I'd change would be using coconut milk instead of soy milk. I wasn't that find of the sweetness myself. Rich & Creamy Mushroom Stroganoff
This is quite possibly one of the most rich and tantalizing dishes I have made! It has all the creamy indulgence of traditional stroganoff without all the dairy and fat. And it tastes tremendously better! I never cared for stroganoff pre-vegan, but this dish had even my four-year-olds exclaiming, “mommy, you make the most delicious food ever!” This is definitely a meal to impress any skeptics coming to dinner.
