Tonight's meal was beyond #amazing! So yesterday we rushed down to the @riversideartsmarket under the bridge to get with @iriefungi the neighborhood #mushroom man aka our 🍄 #pusher and stacked up on some #oystermushrooms for the low! It may just be a southern thing, but honestly, who could live without ranch?

When you first decide to change your diet so drastically, you don’t realize in that moment what you’re giving up. It’s not until you’re eating and you think, “You know what would be good with that?...... RANCH! “ The dairy will be the hardest for me.

Tonight I made a few jars of ranch dressing. It turned out perfect! Just to clear out some things in the cabinet, I used fresh and dried herbs, thought the recipe did call for all fresh. 🤫

1/4 cup plain, unsweetened almond milk

2 teaspoons apple cider vinegar,

1 1/2 cup veganaise, I used reduced fat

1 1/2 teaspoon lemon juice

1/4 teaspoon salt

1/2 heaping cup chopped cucumber

1 teaspoon onion purée

1/4 teaspoon garlic powder

1 tablespoon fresh chopped Italian parsley

2 tablespoons fresh chopped dill

2 tablespoons fresh chopped basil

2 tablespoons fresh chopped chives

Before mixing all ingredients, divide half of your apple cider vinegar and let it sit with the almond milk for 20 minutes to thicken.
