One of my TOP-5 #vegeburger's in the area, Bayside Cafe at the marina in #MorroBay. Pretty sure it's a sysco patty (it's just a little too perfect for homemade but I could be wrong) --and I'm not even a #vegetarian --but I order it over and over. I like the shredded carrots and the oatmeal and the texture of it and I just like the way the whole thing is put together--especially with the alfalfa sprouts. I’ve finally found a home made vege burger recipe that I like!
A little while back our neighbours we invited our neighbours over for a barbecue. I was going to knock up some regular home made beef burgers however I then found out that they were a) vegetarian and b) one of them was allergic to quorn (which to be honest is my go to for quick vege BBQ foods). After a bit of googling, I found this recipe for “SPICY CHICKPEA VEGGIE BURGERS” on the ‘Running on Real Food’ blog and it ticked a lot of boxes in terms of being easy to prepare, used standard kitchen staple ingredients and didn’t take too long to prepare. I cooked them on a slightly greased flat top on the BBQ and they went down a treat with the 2 vege neighbours, my pescetarian wife and me a pretty devout meat eater. Below is my slightly adapted version of recipe which makes about 4 quarter pounder sized burgers.

INGREDIENTS
1 400g can chickpeas, drained and well-rinsed 1/2 red onion, finely diced 1 small courgette (approx 6 inches / 15cm long), grated 3 tbsp dried coriander leaf 3 tbsp red wine or balsamic vinegar 1 tbsp chilli sauce (I’ve used buffalo and sriracha and different time, take your pick and adjust to taste) 2 tbsp smooth peanut butter 1 tsp cajun mixed spice 1 tsp garlic puree 2 tsp ground pepper 1/2 tsp salt 1 cup oats 2 tbsp extra virgin olive oil A dash of soy sauce
METHOD
After draining and rinsing the chickpeas, place them in a bowl and mash them with a fork or potato masher leaving a few chick peas whole.
Add all the other ingredients to the bowl.
Use your hands to mix very well.
Put the mixture in to a burger press and form in about 4
Cook on the BBQ or grill for 10 minutes each side.You can also fry these in a normal frying pan or griddle pan with some oil for 3-5 minutes a side.
Serve as normal burgers with the usual toppings (cheese, lettuce, tomato, etc)
NOTES
Feel free to tweak the spices and herbs to your taste.
They also cook pretty well in the oven on a greased baking tray. 15mins on gas mark 6 or 7 should do it.
Once cooked they keep well in the freezer and can be reheated in the microwave.
