You can't hurry a good curry
So, we had some lovely friends over for a curry night last weekend. I really enjoyed looking for delicious looking recipes that would allow me to cook the curry from scratch using a blend of spices carefully measured to provide a depth of flavour and just the right amount of heat.
I made a dal using a mixture of dried, split chick peas and red lentils as the base and then loads of other good stuff....onions, garlic, fresh ginger, various powdered and whole spices, fresh tomatoes, spinach, cilantro and a dash of coconut milk. The result is a healthy, nutty, spicy, satisfying dish that is sweet, savoury and smooth. It is also much tastier than the cost of its ingredients would suggest.
I combined a couple of Vegetable dal recipes from BBC Good Food website. I am not entirely sure what I did now. It seems to be a balancing act. Tasting at each stage, refining and hoping that your palate's idea of delicious is the same as your guests. Very happily everyone enjoyed it. I will post links to the 2 dal recipes I used on a separate post and you can have a go.
It takes effort to make curry but I like it.
Top tip for locals.....my first trip to Raj Cash and Carry in Groton provided lime pickle, popadoms, fresh green chillies, mango puree for lassis, spices, basmati rice and more besides for a very reasonable cost. Being in the store reminded me of when Dan and I were in Goa, India.....no fuss, no frills but a little treasure trove!
