This vegan stew without beef is hearty, comforting, and full of great flavors. Textured vegetable protein TVP makes the stew taste and feel like meat, and the different vegetables and herbs make it rich and filling.
Ingredients: 1 cup textured vegetable protein TVP. 4 cups vegetable broth. 2 tablespoons olive oil. 1 onion, diced. 2 cloves garlic, minced. 2 carrots, chopped. 2 stalks celery, chopped. 2 potatoes, diced. 1 can 14 oz diced tomatoes. 1 tablespoon tomato paste. 1 teaspoon dried thyme. 1 teaspoon dried rosemary. 1 bay leaf. Salt and pepper to taste. 2 tablespoons cornstarch mixed with 2 tablespoons water optional, for thickening.
Instructions: In a large pot, rehydrate TVP in vegetable broth for 15 minutes. In a separate pan, heat olive oil over medium heat. Add onion and garlic, cook until translucent. Add carrots and celery, cook for another 5 minutes. Add potatoes, rehydrated TVP with broth, diced tomatoes, tomato paste, thyme, rosemary, bay leaf, salt, and pepper. Bring to a boil, then reduce heat and simmer for 30 minutes or until vegetables are tender. If desired, add the cornstarch mixture to thicken the stew. Adjust seasoning if necessary and serve hot.
