Well, this category has a three-way tie:
Voidslime, Mystic Genesis, and Plasm Capture make up the trifecta of Simic Combine counterspells. Each one is Ooze themed, allying them with one of my favorite creature types. Voidslime is notable for its ability to counter activated and triggered abilities in addition to spells. This makes it about as close as you can get to the "counter everything" counterspell. Mystic Genesis takes counterspelling to a whole new level by turning the countered spell into an Ooze creature for you to beat with. Finally, Plasm Capture tacks crazy mana ramp onto a counterspell, bringing back the frightful power of Mana Drain. I'm currently using Plasm Capture in Standard as a way to ramp into Shipbreaker Kraken and/or Tromokratis. With a mana dork on turn two I can potentially ramp into a turn four Tromokratis and have mana to spare. It's scary fun.
