This vegan pesto tastes great instead of regular pesto. It has a cheesy flavor from the nutritional yeast and a rich flavor from the walnuts.
Ingredients: 2 cups fresh basil leaves. 1/2 cup walnuts. 2 cloves garlic. 1/4 cup nutritional yeast. 1/2 cup extra virgin olive oil. Salt to taste.
Instructions: In a food processor, combine basil leaves, walnuts, garlic, and nutritional yeast. Pulse until finely chopped. With the processor running, slowly drizzle in the olive oil until the mixture is smooth and well combined. Season with salt to taste and pulse a few more times to incorporate. Transfer the pesto to a jar or container and refrigerate until ready to use.
