A hearty and tasty white bean chicken chili that is easy to make in a pressure cooker. It's perfect for a warm meal on a cold day.
Ingredients: 1 lb boneless, skinless chicken breasts, diced. 2 cans 15 oz each white beans, drained and rinsed. 1 medium onion, chopped. 2 cloves garlic, minced. 1 can 4 oz diced green chilies. 1 tsp ground cumin. 1 tsp dried oregano. 1/2 tsp chili powder. 1/4 tsp cayenne pepper optional for heat. 4 cups chicken broth. Salt and pepper to taste. 1 cup frozen corn kernels. 1/2 cup fresh cilantro, chopped. Juice of 1 lime. 2 tbsp olive oil.
Instructions: Set the pressure cooker to saut mode and heat olive oil. Add chopped onions and minced garlic, saut until softened. Add diced chicken, cumin, oregano, chili powder, and cayenne pepper. Cook until chicken is browned. Pour in chicken broth, white beans, diced green chilies, salt, and pepper. Stir to combine. Secure the lid of the pressure cooker and set it to high pressure for 8 minutes. Once the cooking time is complete, perform a quick pressure release. Stir in frozen corn, lime juice, and chopped cilantro. Serve hot, garnished with additional cilantro and lime wedges if desired.
