This Spice Crusted Salmon with Watermelon Salsa is a great mix of sweet and savory tastes. The salmon with a spice crust tastes rich and fragrant, and the watermelon salsa gives it a burst of freshness and tanginess. Ingredients: 4 salmon fillets. 2 tablespoons olive oil. 2 teaspoons paprika. 1 teaspoon ground cumin. 1 teaspoon ground coriander. 1 teaspoon garlic powder. 1 teaspoon salt. 1/2 teaspoon black pepper. 2 cups diced watermelon. 1/2 cup diced red onion. 1/4 cup chopped fresh cilantro. 1 jalapeo, seeded and minced. Juice of 1 lime. Salt and pepper to taste.
Instructions: Turn on the oven and heat it up to 400F 200C. Mix cumin, coriander, garlic powder, salt, and black pepper with olive oil in a small bowl. Spread the spice mix out on all sides of the salmon fillets. Put the salmon fillets on a baking sheet that has parchment paper on it. The salmon should be baked in a hot oven for 12 to 15 minutes, or until it is fully cooked and flaky when pierced with a fork. Make the watermelon salsa while the salmon is in the oven. Dice the watermelon and put it in a medium bowl. Add the red onion, cilantro, jalapeo, lime juice, salt, and pepper. Carefully toss to mix. Put a big spoonful of watermelon salsa on top of the hot salmon that has been spiced. Have fun!
