Ingredients: 1 lb ground beef or ground turkey. 1/2 cup diced onion. 2 cloves garlic, minced. 1 tbsp coconut oil or avocado oil. 1 tsp chili powder. 1/2 tsp cumin. 1/2 tsp paprika. 1/2 tsp salt. 1/4 tsp black pepper. 1 cup cauliflower rice. 1 cup shredded lettuce. 1/2 cup diced tomatoes. 1/4 cup chopped fresh cilantro. 1/4 cup sliced avocado. 1/4 cup sliced olives. 1/4 cup coconut cream. 1 lime, cut into wedges.
Instructions: In a skillet over medium heat, heat the oil. Add the chopped onions and minced garlic, and saut the onions until they become transparent. Cook the ground meat until it turns brown, crumbling it during the cooking process. Add the paprika, cumin, chili powder, salt, and black pepper. Cook the cauliflower rice for an additional three to five minutes, or until it begins to soften. To make a salsa, combine chopped cilantro, diced tomatoes, and shredded lettuce in a separate bowl. Spoon the meat mixture onto large lettuce leaves to assemble the tacos use them as taco shells. Add a drizzle of coconut cream, sliced avocado, sliced olives, and salsa on top.
