Wheat Pancakes with Cream Cheese and Smoked Salmon
These delicious and healthy Wheat Pancakes with Cream Cheese and Smoked Salmon make a very nice (and easy) breakfast for two.
Ingredients (serves 2; serving size: 2 pancakes):
1/2 cup whole-wheat flour
1/2 cup wheat bran
1/4 teaspoon salt
1/2 teaspoon freshly ground green pepper
1 large egg
1/2 cup buttermilk
1 tablespoon olive oil
2 tablespoons cream cheese
2 ounces smoked salmon
1 cup baby spinach, rinsed
fresh parsley (optinal)
thin lemon slices (optianal)
In a medium bowl, combine whole-wheat flour, wheat bran, salt and green pepper. Whisk in egg, gradually adding buttermilk until mixture comes together, in a rather thick paste.
In a large nonstick skillet, heat olive oil, over medium-high heat. Once hot, add a heaped tablespoon of the pancake batter on one side, flattening it into a circle with the back of the spoon. Repeat with remaining batter so you have four pancakes. Cook, 1 minute and a half on each side, until golden brown. Remove from heat.
Spread 1/2 tablespoon cream cheese onto each wheat pancake, and top with smoked salmon. Serve 2 pancakes onto 1/2 cup baby spinach on each plate. Garnish with parsley and lemon slices, if desired.
