i’ve never heard of beer cheese soup! what’s it like, and do you have a recipe you recommend?
I’m still figuring out/refining a recipe I like tbh, it’s a little bit of a tricky one for me -- although I think a part of that is that I’m not a big fan of alcohol, so balancing the beer taste to be subtle but not absent is part of the challenge. (Which may or may not be as much of a consideration for you.) I’ve made it myself a few times, never quite to my satisfaction, but I should really try again.
Basically it’s a thick, cheesy broth, often made with cheddar (but you can use other cheese -- I’m thinking about adding some gouda next time). The best beer cheese soup I’ve ever had was almost a glorified dipping sauce for pretzels and other bread, which was delicious. I’ve used a modified version of this recipe in the past, but because I’m very picky about food, I personally leave out the carrots and onions. The last time I made it I also (at the suggestion of another recipe I think, but I can’t find that one!) nixed the dijon and used paprika as my extra flavor instead, which I really liked.
The place I’ve run into trouble with is the beer -- as someone who wants that flavor to be less intense, I haven’t found quite the right approach there. My lack of alcohol knowledge meant that I picked a bad one for cooking with the first time I tried -- you want something less intense, like a lager. I also tend to use slightly less of it than recipes recommend, usually replacing the lost liquid with a little water so I don’t lose volume, just... titrate down the beer flavor.
Roundabout answer but only because it’s still something I’m experimenting with myself! I love beer cheese soup and feel like it’s a pretty ultimate comfort food (and a less picky eater than I might have an easier time making it), so if it sounds tasty to you I highly recommend making it sometime, especially as the days get shorter and colder.
peach
peach: i can’t escape
haha nice all according to my nefarious plan
more than this, another world, happily, summer love, nobody compares
more than this: what’s the bravest thing you ever did? i think it’s choosing myself over my faith/religion. i grew up super religious and my church is homophobic but as i realized i was gay i could either choose to deny my sexuality or embrace it and i’m choosing to embrace it and change my beliefs and disappoint my parents and all that lmfao
another world: which fictional world would you want to live in if you could? star wars omg i wanna be a pilot or some kind of force wielder or have some force sensitivity and just fly around and do shit idk! or harry potter im not a huge fan but just watching the movies makes me all excited and curious plus i wanna be a sexy slytherin at hogwarts
happily: name three things that make you happy. carly rae jepsen. ice cream. star wars.
summer love: talk about a summer memory. omg ok so last summer i went on a cruise and trip around the mediterranean. and everything was so fucking pretty it looked like screensavers everywhere i went. but my fave was when we were on mykonos greece for like a few hours and i fucking love beaches so i had to go to a beach so i went on my own and took a bus to a pretty beach and chilled and drank a smoothie and read aristotle and dante. it was the most chill thing ever
nobody compares: who’s your idol? i dont think i have one. but tbh amal clooney sounds like everything i wanna be. international human rights lawyer sexy as hell and prob rich af w trophy husband i love ha
myself bc no one knows me but i love my posts and my takes <3 muah
love a fellow another great idea from ME bitch . its self care. its knowing ur worth
you might be surprised the shoes you can find at a thrift store, like even if it’s a little step up from your current pair it’ll help you feel better, but i know that struggle too aha 🙃 also inserts help a lot!!
oh, thank you for the suggestion! i think i might go with inserts, since my shoes aren't necessarily poorly constructed, they just lack any kind of support adlfkgjdfg
it’s probably the shoes, arch support really is everything. lately i’ve avoided any shoes without it except if it’s like just for a couple hours or something because i do a lot of walking and i get so sore all over
oh yeah, i don't doubt that! i hadn't considered the arch support thing but i believe it --- my shoes have no support anywhere! i'm unfortunately not in a good position to be buying new shoes right now ahaha rip
