This Roasted Garlic and White Bean Hummus is a delicious and creamy dip that's perfect for snacking or serving at parties. The roasted garlic adds a sweet and savory depth of flavor to the classic hummus, while the white beans make it extra creamy. It's simple to make and pairs wonderfully with pita bread or fresh veggies.
Ingredients: 1 head of garlic. 1 can 15 oz white beans, drained and rinsed. 2 tablespoons tahini. 2 tablespoons olive oil. 2 tablespoons fresh lemon juice. 1/2 teaspoon cumin. Salt and pepper to taste. 1/4 teaspoon paprika for garnish. Fresh parsley leaves for garnish.
Instructions: Preheat your oven to 400F 200C. Slice the top off the head of garlic to expose the cloves. Drizzle with a little olive oil, wrap it in aluminum foil, and roast it in the preheated oven for about 30-35 minutes or until the garlic cloves are soft and golden. Allow it to cool. Once the roasted garlic is cool enough to handle, squeeze the cloves out of the skins and place them in a food processor. Add the drained white beans, tahini, olive oil, fresh lemon juice, cumin, salt, and pepper to the food processor with the roasted garlic. Blend the mixture until smooth and creamy, scraping down the sides as needed. If it's too thick, you can add a bit of water or more olive oil to reach your desired consistency. Taste the hummus and adjust the seasoning if necessary, adding more salt, lemon juice, or cumin as desired. Transfer the hummus to a serving bowl, drizzle with a bit of olive oil, sprinkle with paprika, and garnish with fresh parsley leaves.
