These are a couple of double page spreads I did earlier this year for Woman’s Weekly on a fictional story they ran.
Ham, Tomato and Rocket pizza
Prep time: 10 min Cooking time: 10 min Serves: 2 Nutritional: 8.0g total fat 3.5g saturated fat 373 cal 43.3g carbohydrate 27.1g protein 8.4g fibre
2 large wholemeal pitta bread (160g) 2 tablespoons tomato paste 150g shaved ham 250g cherry tomatoes, halved 1/4 small red onion (25g), sliced thinly 1/3 cup (80g) low-fat ricotta cheese 30g baby rocket leaves 2 tablespoons finely shredded fresh basil
1. Preheat oven to 200 degrees/180 degrees for fan-forced. 2. Place bread on oven trays; spread with paste. Divide ham, tomato and onion between bread; top with dollops of cheese. 3. Bake about 10 minutes. Serve sprinkled with rocket and basil.
Berry smoothie

250g strawberries 1/2 cup (75g) fresh or frozen blueberries 1 cup (250ml) skim milk 3/4 cup (200g) skim-milk fruit-flavoured yogurt
1. Blend ingredients until smooth.
Warm roasted vegie salad

2 flat mushrooms (160g), halved 1 small kumara (250g), cut into 4cm pieces 1 small red capsicum (150g), cut into 4cm pieces 2 small tomatoes (180g), quartered 2 cloves garlic, chopped coarsely 1/4 cup coarsely chopped fresh flat-leaf parsley 50g baby rocket leaves 1 tablespoon balsamic vinegar 2 tablespoons low-fat ricotta cheese
1. Preheat oven to 220 degrees 2. Combine vegetables and garlic in large baking dish. Roast, uncovered, about 25 minutes. 3. Combine roasted vegetables with parsley, rocket and vinegar in large bowl. 4. Serve salad sprinkled with cheese.
Ricotta, basil and Ham wrap

2 small zucchini (180g) 1/4 cup (60g) low-fat ricotta cheese 3 rye mountain bread wraps (90g) 75g shaved ham 1/4 cup coarsely chopped fresh basil
1. Preheat sandwich press 2. Slice zucchini lengthways into ribbons using a vegetable peeler 3. Divide cheese among wraps; top with zucchini, ham and basil. Roll to enclose 4. Toast wraps in sandwich press for about 3 minutes, cut in half to serve.
