Surprise on a plate

I want you to guess what the red vegetable is.  There’s a clue in the photo below.  

From left to right in the small pots are slices of cooked celeriac, cooked beetroot and plain yogurt. Then in the glass pot is the juice that the beetroot was cooked in.

So back to the top picture.  The red vegetable is the celeriac which has been dipped in the beetroot juice.  Voila.  A wonderful red colour, with very little taste of the beetroot, still having the slightly earthy celery flavour.

Below is some yogurt dressing with chopped radish, spring onion and chives.

What’s the point?  A bit of fun to brighten the dark days.
