Bruschetta Avocado Toast
I had a few volunteer cherry tomato plants pop up this season. I let them go and they have been absolute troopers pumping out little fruits for weeks.
The Amish Paste and many of the Pink Brandywines have ended up in the freezer for future use.
I pick my tomatoes at early blush stage and ripen them inside.

The sun was rather harsh at the time of capture. So the exposure was biased darker by 2 stops to retain as much of the highlights as possible. And then in post, the shadows were brightened up a tad to soften the harsh shadows.
Mediterranean Burrata and Pita Board
Ingredients:
2 balls of burrata cheese (about 250 g each)
4 pita breads, warmed and cut into wedges
1 cup (150 g) cherry tomatoes, halved
½ cup (70 g) Kalamata olives, pitted
½ cucumber (100 g), sliced
¼ cup (35 g) roasted red peppers, sliced
2 tbsp (30 ml) extra virgin olive oil
1 tbsp (15 ml) balsamic glaze
1 tsp (2 g) dried oregano or fresh basil leaves for garnish
Sea salt & black pepper, to taste
Directions:
Arrange warmed pita wedges on a large serving board or platter.
Place burrata in the center and drizzle with olive oil, balsamic glaze, and a sprinkle of oregano or basil.
Arrange cherry tomatoes, olives, cucumber slices, and roasted red peppers around the burrata.
Season lightly with sea salt and black pepper.
Serve immediately, letting guests tear into the pita and dip into the creamy burrata with the Mediterranean accompaniments.
