Ingredients: 1 pound pork loin, cut into bite-sized pieces. 6 slices of bacon, chopped. 1 red bell pepper, cut into chunks. 1 green bell pepper, cut into chunks. 1 onion, chopped. 1 cup pineapple chunks canned or fresh. 1/2 cup ketchup. 1/4 cup white vinegar. 1/4 cup brown sugar. 2 tablespoons soy sauce. 2 tablespoons cornstarch. 2 tablespoons water. Vegetable oil for frying. Salt and pepper to taste. Cooked rice for serving.
Instructions: Cook the chopped bacon in a big wok or skillet over medium heat until crispy. While leaving the bacon grease in the skillet, remove the bacon and set it aside. When the bacon grease is in the skillet, add the chopped onions and saut them until they are transparent. Once the pork pieces are added to the skillet, cook them until they are thoroughly cooked and browned. To taste, add salt and pepper for seasoning. To make the sweet and sour sauce, combine the ketchup, white vinegar, brown sugar, and soy sauce in a different bowl. Cover the cooked pork in the skillet with the sweet-and-sour sauce. Add the cooked bacon, pineapple chunks, and red and green bell peppers. After giving everything a good stir, simmer the mixture for a few minutes to thicken the sauce. Make a slurry by combining the cornstarch and water in a small bowl. To further thicken the sauce, stir the slurry into the skillet. Simmer for a few more minutes, or until the vegetables are crisp-tender and the sauce has the desired thickness. Over cooked rice, serve the sweet and sour pork with bacon.
