Enjoying a traditional Russian cheesecake called Zapekanka/запека́нка at Usha Ungasan.
inspired by this pin: chicken and zucchini zapekanka it takes about 25 minutes to prepare ingredients and from 20 to 30 minutes to bake your zapekanka. this recipe isn't suitable for low-energy days since it requires grating cheese, peeling zucchini, cutting ingredients and cleaning your food chopper afterwards. if you follow my recipe, you'll get 4 medium-sized portions. zapekanka can seem a bit dry because of the chicken breast but zucchini and oil make it softer.
you will need: > 1 chicken breast; > 1 zucchini — medium-sized; > 1 egg; > light cheese — to your likings; > greek yogurt — 1 table spoon; > cooking oil — 1 table spoon.
this recipe also requires: > a food chopper — for chopping zucchini and chicken breast; > a casserole dish — for baking zapekanka in; > a cutting board — for cutting chicken breast and zucchini; > a peeler — for peeling zucchini; > a grater — for grating cheese; > a table spoon — for adding yogurt and mixing ingredients; > a knife — for cutting chicken breast and zucchini (i break eggs with a knife too).
steps: 1. heat the oven first. choose 180°C for this recipe. 2. wash, peel and roughly cut zucchini. put it in the food chopper and chop until you get small crumb-like pieces (not a puree!). put the chopped zucchini into a casserole dish (i'm doing it with my hands to minimize spoons to clean later). 3. add greek yogurt into the casserole dish. 4. roughly cut the chicken breast. put the pieces into the food chopper and chop until you get a puree. then use the table spoon from your yogurt (it's okay if it still has some on it) to add the minced chicken into the casserole dish. 5. add an egg into the casserole dish. 6. grate the first portion of cheese to your likings. my grater allows doing it right above the casserole dish. 7. add a pinch of salt and cooking oil. 8. mix the ingredients in the casserole dish until you get a smooth texture. 9. grate another portion of cheese until you have all of your zapekanka covered. 10. put your zapekanka in the oven for 20-30 minutes (the thinner your zapekanka is, the sooner it will be ready). enjoy!
