Easy Greek Lemon Chicken Recipe - Flavorful & Zesty
This gluten-free shrimp ceviche is a tasty and light dish that can be served at any time. Fresh lime juice is used to marinate the shrimp, which is then mixed with tomatoes, onions, cilantro, jalapeo, and avocado to make a zesty dish. It's easy to make and will look great!
Ingredients: 1 pound raw shrimp, peeled and deveined. 1 cup lime juice about 8-10 limes. 1 cup diced tomatoes. 1/2 cup diced red onion. 1/4 cup chopped cilantro. 1 jalapeo, seeded and minced. 1 avocado, diced. Salt and pepper to taste. Tortilla chips or lettuce leaves for serving optional.
Instructions: In a medium bowl, combine the shrimp and lime juice. Let marinate in the refrigerator for 20-30 minutes or until the shrimp turn opaque and pink. Meanwhile, prepare the rest of the ingredients - diced tomatoes, red onion, cilantro, jalapeo, and avocado. Once the shrimp are marinated, drain off the excess lime juice. In a large bowl, mix together the shrimp, diced tomatoes, red onion, cilantro, jalapeo, and avocado. Season with salt and pepper to taste. Serve immediately as a refreshing appetizer with tortilla chips or lettuce leaves, if desired.
