A refreshing and flavorful salad featuring grilled Greek lemon garlic chicken served over a bed of mixed greens, tomatoes, cucumbers, onions, feta cheese, and Kalamata olives.
Ingredients: 4 boneless, skinless chicken breasts. 2 lemons, juiced and zested. 4 cloves garlic, minced. 2 tablespoons olive oil. 1 teaspoon dried oregano. Salt and pepper, to taste. 8 cups mixed salad greens. 1 cup cherry tomatoes, halved. 1 cucumber, sliced. 1/2 red onion, thinly sliced. 1/4 cup crumbled feta cheese. 1/4 cup Kalamata olives, pitted and halved.
Instructions: Cut up some garlic, add some olive oil, dried oregano, salt, and pepper to a bowl. Then add the lemon juice and zest. Put the chicken breasts in the bowl and use the marinade to cover them all over. Put them in the fridge for at least 30 minutes to soak up the sauce. Get a grill or grill pan hot, but not too hot. For 6 to 8 minutes on each side, or until done, cook the chicken breasts. Take the chicken off the grill and give it a minute or two to rest. Cut the chicken into thin strips. Mixed greens, cherry tomatoes, cucumber, red onion, feta cheese, and Kalamata olives should all be put in a large salad bowl. Place the chicken slices on top of the salad. Add more olive oil or any marinade that is left over, if you want. Toss the ingredients together gently to mix them. Serve right away and enjoy!
