I truly believe that breakfast is the most important meal of the day. It’s typically my biggest meal of the day. Usually keeps me going from 6am until lunch, which is typically about 1pm. I do have a snack mid morning. But that’s just to keep my metabolism going. If I’m still pretty full, I’ll skip my morning snack and save it for the afternoon or a pre-work out snack. You’ve got to make sure you are eating foods that not only fill your belly but that fill your mind as well.
This is the breakfast that does that for me. Fills me in body and mind. It makes me feel good and keeps my morning high going until it’s time to eat lunch. Food truly does do a body good. Please treat your body with love and respect.
Here’s what you’ll need:
2 eggs
bell pepper, sliced
1 tomato
1/2 avocado
1/4 cup parm
2 pieces of bacon (I pre prep enough bacon for a week)
salt and pepper to taste
1/4 cup water
Warm up your skillet to medium. When your skillet is warm, spray it with avocado spray or any non stick spray of your choosing.
Place two slices of bell pepper in your skillet. I like to warm up the bell pepper for a couple of minutes on each side to get it cooked up a little bit.
Once you’ve got the bell warmed up in the skillet, add an egg to each bell slice. It may leak out of the bell, but that’s ok. No need to panic. Just a little bit will sneak out. This is when I like to add the salt and pepper. I love pepper, so I lay on the pepper. No holding back. HA. I add very little salt since the cheese will be a little salty as well.
Now that you’ve got both eggs going, turn the heat down to medium-low and add the water. It will steam a bit, so don’t be alarmed. sprinkle the cheese on to each egg. Then cover the skillet with a lid
Cooking time may vary. It all just depends on how much you want the egg yoke cooked. Since I don’t eat bread, I like mine cooked all the way through.While your eggs are cooking, slice up your avocado and your tomato and place them on your plate so they are ready to eat when your eggs are done.
I prep enough bacon on Sunday to last about a week. So if you don’t have bacon ready to go, you’ll want to cook that up before you start making your eggs. Otherwise, just before you are ready to plate your eggs, warm up your bacon. I like to warm mine up for about 10-15 seconds. Place bacon on your plate and then check your eggs.
Once your eggs are cooked to your liking, place on prepared plate.
Heres the best part! Time to eat up. This is truly the best way to get your work week going and not have to worry about getting hungry in a matter of an hour.
I have a hard time filling up at breakfast. Or at least I use to when I’d eat other types of breakfast foods. Especially, when I’d eat oatmeal or cereal. Which, I don’t eat anymore.
