this is the working in food service experience
The Bear is centred around food and running a restaurant but the real soul of the show is the way it adeptly deals with the continuous process of grieving.
Two things I know well: grief/trauma and the restaurant business
nothing increases the quality of a television show more than realistically paced and delivered dialogue….. everyone on the bear talking over each other, having three conversations at once, and shouting constantly over the sounds of cooking…. that’s what it’s about!!
…shit happens. I started a fryer fire, night after I won Food & Wine’s ‘Best New Chef,’ nearly burned the place down. This weird thing happens, too, you have this minute where you’re watching the fire and you’re thinking, “If I don’t do anything, this place will burn down, and all my anxiety will go away with it.”
And then you put the fire out.
