Homemade Tomato Paste: Delicious!
Ingredients: 4lbs of overripe tomatoes, peeled; 1 sweet red bell, seeded; 1-2T of sea salt.
{I plan on using mine for homemade ketchup so these are all the ingredients I used}
Preparation: Process tomatoes and bell pepper in a food mill, processor, or blender until well pulped.
Transfer to a pot and bring to a boil for 2-3 minutes.
Place mixture in a piece of cheese cloth, and using a strainer, suspend it over a bowl. Leave it to drain for 12 hours in the refrigerator to remove all excess liquid.
Transfer mixture to a glass or ceramic baking dish and stir in salt. Allow to come to room temperature then dry in a lukewarm oven for 12-20 minutes.
Spoon into sterilized glass jar. Take care to avoid creating air pockets, and top with 1/4 inch of EVOO (extra virgin olive oil) for storing. I will skip this step because I want to turn mine into ketchup! The ketchup recipe will follow shortly!
I love investing time into homemade foods. There is little that is more rewarding when you know what you are putting into your body and that it is at its freshest!

Spicy Tomato Soup
Red Bell, Celery Stalk, 7 Tomatoes, 1/2 Cucumber (skinned and seeded), 3 Garlic Cloves, 3T Olive Oil, 1t Sea Salt, 1/8t Cayenne Pepper, and green onion for garnish.
[I was fresh out of red bell but had an orange bell that I used in its place. I also put just a bit more cayenne pepper and just a tad less of sea salt. Result: DELICIOUS!]
Put all ingredients in blender and blend until smooth. Garnish with finely chopped bell, green onion, and cucumber skin.
I ate some raw coconut meat just before this soup and by the time I was finished with this bowl, I was stuffed (not heavy and yucky - I felt great after!)!!!!

Sauerkraut!
Great for the gut! And delicious! This is my first homemade batch. So far… three days into fermentation and it is looking and smelling great!
UPDATE: After two weeks of waiting, my first batch was not a successful one. No worries though because I dumped it and tried again! This time instead of one head of cabbage, I used two. If it doesn't work then I will stuff it as full as I can with four or more heads so there is absolutely NO AIR in the container! Here's to batch two!

Here’s a Spring idea!
My mom and I went to Ikea the other day and I picked up this white tray and this white pitcher… And I love ‘em! I bought flowers on sale from Target last year that I shoved in the pitcher. I found some spring colored ribbon and tied a bow around it. Also on the tray is a martini glass. We don’t drink so I use it every season! For spring, try putting a miniature nest with eggs in the bottom section and on top, fragrance pellets and a butterfly ( or try a bird )! This adds texture and brightness to our living room! One of my favorites so far!

Hi Rita! I think it is if I were to start from seedlings... Ill just go buy ones that are ready to plant. No big deal! Then next year, I won't even have to buy seeds!
This is what became of my little seedlings : (
They all died except for half of the tomato plants that I purchased from our local nursery that were ready to transplant... still, I am not sure if they will last either. We recently planted a baby orange tree and it seems like it may have survived! Plan B?! Ill have to skip the seed process as it takes to long and will have to go straight to the nursery for more mature seedlings to transplant. Not a bad lesson for my first attempt at organic urban gardening!
