So about a month ago During my crab infatuation (yummy!), I made crab Panang curry. It was really a sensational dish, so I thought I would make it again, only I used chicken thighs instead and cooked it with button mushrooms, sweet carrots, onions, kafir lime leaves, Thai bird chi's and garnished with fresh Thai basil and lime juice. Spicy, creamy, nice and savory and chicken that practically melted away from the slightest touch of it. Paired together with a fragrant cilantro and lime zest jasmine rice.
