Imagine tomato soup + quinoa + kale.
Having a Netflix and DIY face mask kind of night, which wouldn’t be complete without SALSA and TJ’s flaxseed chips! :)
5 medium tomatoes, diced
1 medium onion, diced
4 banana peppers, chopped
1/2 cup apple cider vinegar
1 tsp salt
4 tsp minced garlic
1 tsp lemon juice
1/2 tsp cayenne
1/2 tsp stevia
1/4 tsp cilantro
Combine all ingredients.
For a chunkier salsa, serve as is. For a smoother salsa, add all ingredients to blender and mix on lowest speed until it has reached your preferred consistency.
My lunch from today! Slaw mix, cucumbers, romaine, & avocado + nori sheets.
In the mood for takeout, so egg rolls it is! I used Trader Joe’s broccoli slaw mix.

Crockpot Stuffed Peppers
Played around with this recipe. I used buffalo chicken sausage, tomato sauce (instead of paste), and added an extra pepper.
The tomatoes are all picked and ready to eat!
Harvested the garden this morning!
Raspberry + blue cheese + bacon + arugula. Recipe from Lemon Tree Dwelling.
Blended this up for dessert tonight:
1 avocado
5 ice cubes
1/2 cup almond milk
1/4 tsp vanilla extract
1/2 tsp lime juice
15 drops liquid stevia
1/4 tsp cinnamon
Pasta Con Asparagi
I used Trader Joe’s brown rice penne and feta.
Tonight was a special occasion, which called for an extra special dinner. Seared ahi tuna with spicy mayo. Hands down the prettiest dinner I’ve ever made!
