Elderflower cordial
Elderberry cordial is very popular, I know, but have you ever tried the elderflower version of it?
It is easy, tasty, thirst-quenching, and so versatile. It can be used in cocktails, tonics and lemonade.
Those beautiful flowers bloom in April and May and to me, it is the scent of Spring. I always collect as much as I can to dry them for my Winter dishes and make a couple of bottles of cordial.
Ingredients (for 1L of cordial)
- 80 stalks of elderflower
- 2 lemons
- 300gm caster sugar
- 1L water
Method
- Shake the stalks to clear off dust and pollen. My advice is to do it outside!
- Remove all the stems and only keep the little flowers in a large bowl. This step is quite long but the stems are very bitter and you really don’t want to use them.
- Dice the lemons thinly and mix them with the elderflower.
- Add the sugar in the bowl.
- Mix, cover with cling film, and leave it all to macerate over night.
- The next day, make sure your bottles are clean and ready to use.
- Pour the mixture in a large saucepan and add the water.
- Mix well and turn on low heat. Stir regularly and simmer for 10 minutes. It shouldn’t boil.
- Filter into the bottles while it’s still hot and seal immediately.
There are no preservatives in the recipe but if your bottles were perfectly clean and filled while the cordial was still hot, you should be able to store for a couple of months.
