hi! amazing quick weeknight pasta — chop up 3-4 big garlic cloves, half a white onion. drain and rinse a can of chickpeas. toss all in a sauce pan with some olive oil and saute. add in a heaping spoonful of chili garlic paste, some liquid smoke, a healthy glug of maple syrup, a squeeze of lemon and a big spoonful of tahini. salt and pep to taste, mix well in the pan and turn the heat up and let it get toasty + start to get crispy bits - keep a spatula handy to toss regularly. meanwhile cook your fave pasta. season it up however you want — (i added some crushed aleppo chili, orange zest, green onion, fennel, and coriander.) toss it all into your pasta. then sauté real quick a biiiig handful of spinach or your favorite green to mix in. toss all together and use some good olive oil to drizzle if it’s a bit dry. delicious and comes together in 20 w/ mostly pantry items!!!
