Ingredients: 1 1/2 cups all-purpose flour. 1/2 cup cocoa powder. 1/2 cup sugar. 1/4 cup brown sugar. 1/4 cup unsalted butter, melted. 1/4 cup vegetable oil. 1 cup Greek yogurt. 2 eggs. 1 tsp vanilla extract. 1/2 tsp baking powder. 1/2 tsp baking soda. 1/4 tsp salt. 1/2 cup chocolate chips. 1/2 cup shredded zucchini. 1/2 cup shredded carrots. 1/4 cup chopped spinach. 1/4 cup chopped kale.
Instructions: Turn the oven on to 350 degrees Fahrenheit 175 degrees Celsius and line a muffin tin with paper liners. Mix the flour, sugar, brown sugar, and cocoa powder in a big bowl. Melted butter, vegetable oil, Greek yogurt, eggs, and vanilla extract should all be combined in a separate bowl. Mixing until just combined, pour the wet ingredients into the dry ingredients. Until the batter is smooth, fold in the baking soda, baking powder, and salt. Add the chocolate chips, chopped kale, chopped spinach, and shredded carrots and zucchini and fold gently. Load the batter into the muffin tin, about two thirds full in each cup.
