I want to explain this a little more since I have been asked already. I´ve made a little tutorial on how I personally draw birds faces you can find here.

I can´t stress enough how much research is important, look at real birds and try to understand them, because I´m a somply human and I could be doing a lot of things wrong too. lol-

About the expressions they are not different from a regular face, just keep in mind that a beak has two solid parts, these parts are the tips and don´t move at all, so pretty much all that gives the expression are the sides of the mouth. You can bend them in any expresion you want and work as a beak if you keep the front top and bottom always solid and pointing downards.

Now the length and shape of the beak depends on the species you are drawing so make a research on that to see how they beaks move, parrots for example, can move the top of their beaks individually when most of the other birds can´t.

About the wings they are pretty much extended when relaxed. These are not really “wings” because he can´t fly with them, he could maybe glide like some primitive birds and dinosaurs did but I highly doubt it so even. In this world birds lost they ability to fly long time ago.
