Salads don't have to be boring. There is more to a salad than lettuce, believe me. My family has grown to love salads as they are bright, healthy, and delicious. For this winter salad, I have used seasonal items you can find at your local grocery store. Let this recipe be your guide, and fix it up as you love it! Better yet, create a salad buffet at your next gathering, and let people build their own. What a great party idea!
What is in a Winter Salad
Pomegranate is in season from October to February. You will find me using it a lot this time of year. Not only does it add a pop of colour and flavour, but I love how it POPS in your mouth like a little ray of sunshine during Canada's drearier days.
Pumpkin Seeds are abundant in late fall. Toasting them adds a nuttier, crispier texture. From my many fails over the years, here is my advice on how to toast nuts and seeds, especially if you are artistically ADHD like me. Trust me, when you have a lot of things going on in the kitchen at one time, these little tricks can make a lot of difference.
Crispy Prosciutto: OH YES PLEASE! If you have never air-fried crispy prosciutto, this is the time! Seriously incredible and adds crunch, salt, and just plain goodness to any salad! Here is how you do it:
Brie: I have to be honest with you, almost any cheese works in this salad, but Brie adds a creaminess that works so well with the crispness of the prosciutto, the tangy pop of the pomegranate, and the crunchiness of the pumpkin seeds. This is truly an amazing winter salad!
Apples: Have at it! Use any apple you like, but I recommend Gala, Honeycrisp, or Granny Smith.
Try adding some Pickled Red Onions: this will add a lovely hit of acid, pairing well with the creaminess of the Brie.
Cheeses: If you are looking for something different, try blue cheese or aged white cheddar. Oh boy, now I have to go make this salad 3 different ways!
Salad Dressings: I love this Lemon Garlic Vinaigrette Dressing. I would also recommend a raspberry or a balsamic glaze. Perfect for a winter salad!

3 cups mixed salad greens1 gala apple 1/2 cup pomegranate seeds1/4 cup pumpkin seeds (toasted)4 oz brie 25 grams prosciutto
Crispy Prosciutto and Pumpkin SeedsProsciutto Air fryer: cook for 5 minutes until crispyPumpkin Seeds: Saute for 2-3 minutes Salad AssemblySlice apples and cut brie into wedgesSplit lettuce into 2 bowls Add all the toppings and serve with a dressing: recommend a lemon or raspberry vinaigrette, or a balsamic glaze
