Barbacoa that I made up because I need some BARBACOA and didn't have a recipe.
The notes in parentheses are the ingredients I used you may use what you have on hand and do not have to be brand specific.
chuck roast (3 and one half l b, bone-in, grass fed) Several cloves of garlic, peeled (6)
1 bottle of pilsner style beer (Abita Seersucker Summer Pils)
half a cup of chicken broth or water
Key lime juice concentrate
1 and 1 half onion, Divided- the whole onion sliced, the half onion diced.
1 quarter cup of chopped cilantro (more if you like, I like)
1 to 3 tbsp of chipotle hot sauce (Cholula) or 1 to 2 chopped smoked jalapenos
Make a Rub with 1 tsp of each:
Granulated Garlic, salt, cumin, brown sugar (coconut sugar), and Chili powder plus 1 half tsp of fresh ground pepper.
Rub the roast all over, it is ok if you don't use all the rub or have to make more. Make small cuts in the roast and stuff with pieces or whole cloves of garlic.
Set the oven to 300º Fahrenheit
On the stove, In a dutch oven; melt 1 tsp or so of butter over med high heat. Brown the roast ALL over. Pour in one bottle of beer and the chicken broth or water. Add 1 to 3 TBSP of the lime juice Top the roast (fattiest side up) with the whole sliced onion. Cover and put in oven for 3 to 5 hours depending on the size of the roast. You may flip it over a few times if you want to make sure the whole roast gets saturated in the beer braise. The roast will almost be ready when it easily falls apart. at this point shred the roast, remove the bones, and add the chipotle hot sauce or chopped smoked jalapenos. Reduce the heat to 250º F and cook half an hour longer. Add 1 to 3 TBPS more of the lime juice the Half of a diced onion and quarter cup of chopped cilantro, and stir. Let the roast rest for 20 minutes before serving or keep in a warm oven (150º F) until ready to serve. Serve as filling for burritos, tacos, or by it's self. To accompany: Serve with pickled red onion and carrot relish with one chopped jalapeno added to the recipe..
