Had an expensive gluten free brownie with expensive vegan ice cream and vegan whipped cream, really going out of my way to make sure the foods I’m eating are safe foods.... stuck on the toilet an hour later 🙃🙃

I just made boiled peanuts out of chick peas.
A couple days ago, I was eating chickpeas for the first time not in soup and I realized that the texture is almost exactly the same as boiled peanuts. I grew up eating Cajun boiled peanuts one road trips and even just when we saw them while driving home. They were common all over the south in the USA. But about 10 years ago my mom was diagnosed with a peanut allergy, it was mild at the time but got worse and she was hospitalized twice because of it since Christmas.
My mom and I loved BP so much and when she would go out of town I was able to make them myself in the crockpot, but in January I was diagnosed with a peanut allergy (among others) and have stopped eating them. When I get the delicious texture between my teeth, I was immediately struck with the idea to cook chickpeas to taste like boiled peanuts.
I searched and searched for a recipe, but I quickly came to the conclusion that people who eat boiled peanuts do not often eat chickpeas and vice versa. So when I searched boiled peanuts and chickpeas together all I got were recipes for boiled peanut hummus, which I obviously can’t eat. So I tried searching Cajun chickpeas and those were all cooked chickpeas roasted with Cajun seasoning. Not what I wanted.
So I decided to make them just as I would boiled peanuts, but in a pressure cooker. Obviously I needed far less seasonings because there is no tough shell to cook through. So below is my recipe for boiled peanut style chickpeas.
Insta pot
1 pound dry chickpeas
Cajun seasonings, I used a premixed bottle from smiths. I used about 1/4 of the bottle, but started with less and added more toward the end of cooking, explain later.
Around 1/4 cup of salt.
Rinse the chickpeas, then fill the pot with enough water to reach about 1 inch over the beans.
Add salt and seasonings to taste
Set the pressure cooker for beans/chili. I changed the time to 40 minutes, but needed more time, and more seasonings which added up to the amounts listed above.
I let it sit after it finished for almost 2 hours because I got stuck with little ones, but they were too crunchy and under seasoned so I added more of each and set the pot for another 10 minutes. After that finished it sat for about 10 minutes before depressurization, which took about 5 minutes. Then eat.
I’ll update this as I try it again. Currently I’ve only got one pound of chickpeas left uncooked, because COVID-19 stockpiling knocked out all the beans and rice at my local store before we could get there.
