First batch of yacón ready to go! Our Dark Arts Chocolate bars are 80% Madagascar single origin beans, we used yacón and a touch of vanilla bean to add sweetness. They are earthy, tangy, deep red fruity and a little astringent with a heavy finish of dark roasted chocolate and a subtle sweetness. The yacón is a species of perennial daisy traditionally grown in the northern and central Andes from Colombia to northern Argentina for its crisp, sweet-tasting, tuberous roots.
