A few things to note, however:

The two publications have very little relevance to the researchers I have applied to in terms of research interests.

Same for most of the poster presentations,

If you do have studies in preparation, make sure you have a PI to corroborate that these are indeed in preparation and not just things you are making up on your CV.

It’s mostly the stuff I have in preparation that are far more relevant to what POIs are doing, so fortunately my mentor on those projects submitted one of my letters of recommendation and made sure to point out that these were indeed projects that were either: A) in data collection phases, or B) in the process of being written.
