(this will be a ramble again I am so sorry I am not)
I am afraid that compared to yours, my ideas for the protoss are kinda boring. I HC the protoss don't really have the concept of gender the way terrans do and don't experience attraction in relation to gender identity, rather it's about physical appearance and personality. So I guess you could say everyone is more or less pansexual?? Their version of asexuality/aromanticism definitely exists too.
For the Tal'darim, I see a lot of them having the "I'm into whoever has the ability to beat me up" kind of mentality.
Alarak especially I see as someone who loves to rile others up to get a reaction out of them. Sometimes for his amusement, sometimes because such charged emotions lead to spicier encounters. I also HC him to be on the aromantic spectrum

Ma'lash is aro/ace but will occasionality tango with others for the sake of stress relief
Nuroka is asexual, aromantic and agender, but not really because he strongly identifies with these labels, rather it's because it's so unimportant to him. He's busy following the word of Amon and doesn't have the time to think of such nonsense.

Guraj doesn't have a physical preference but I see her as someone who's drawn to mentally weak protoss because it's a lot of fun to manipulate them and pit them against one another
The singular protoss OC I have that falls into the way terrans see things is Zhakul. Because he was raised by terrans since being very little, many of their ways rubbed off on him, including how they perceive gender and sexuality. The sound of his voice and his general appearance had most terrans seeing him as male, so he took the label. He'd also say he's gay because of his attraction to Jake
Dal'ranak has no physical preference and possibly is on the aromantic spectrum?? Though it's hard to say whether that's because he can only develop feelings after forming an emotional bond to someone or because he's so starved for love and affection he will immediately latch onto anyone who feeds him a crumb of it

Aarondar is demisexual, masc and into fem presenting protoss
Sonrun is into mascs
Erun is into fems
Y'rash is aromantic, though the question could once again be asked whether this is because she truly does not feel romantic attraction or if it's because she's so narcissistic to the point she can only ever love herself. Seeks the company of other fem presenting protoss
Nerus is doing a Nuroka in a sense that he doesn't care about anyone else but Amon. Debatable to say whether he's in love with his god or just obsessed. Nishjima is an exception for him because he believes he's Amon's messenger
