Today I'm prepping/storing/enjoying all of the fresh veggies a fabulous co worker brought me on Wednesday. I sliced and baked the eggplants in a red miso marinade. Slow roasted the roma tomatoes for freezing, sliced the jalapenos for freezing, diced the beefsteak tomatoes to make "bruschetta in a bowl" tonight and am trying to figure out what to do with the green peps. I want to store them for stuffing so I may just pit them and freeze them?
Stepping up my game with homemade pizza sauce! This blend is a mix of the Marinara Sauce from Cooking Vegan and slow, oven-roasted tomatoes straight from the garden. Seasoned with basil, oregano, garlic, onions, black pepper, and just a hint of brown sugar and pulverized in the food processor for a sauce that’s about as creamy as the store-bought stuff. Just, you know, way tastier.
Don’t believe me? Get a load of Exhibit B: a tomato and Daiya cheese pizza slathered in homemade sauce.
