Making black bean and banana empanadas. We found a tool to make it a little easier, but if you look close at the pictures some of these are a bit funny looking still. We got better as we went along too! 2 Tips: Don't put too much filling in and make the dough as thin as you can. Good luck if you!

The kids love "egg" rolls. They get lots of veggies in them, I just sauté instead of fry them and they are so easy to make. We're totally bringing these to camp I run this summer for kids to make there.

We made carrot cashew soup from several different recipes and the kids loved it! Carrots, cashew butter, onion, celery, ginger and a few white beans. The wild thing is it smelled like chicken noodle soup. :0

Vegan Candy Guide

We had these for supper tonight. They were delicious but we could only eat a couple at a time because they were super filling. Here’s the recipe:
1 16 oz can chickpeas, drained and rinsed 2 T oil (we did 1 T of olive and 1 T of veggie oil) 1 cup vital wheat gluten 1 cup saltine crackers (about 1/2 a sleeve) 1/2 cup vegetable broth or water 1/4 cup soy sauce 1 teaspoon dried thyme 1 teaspoon paprika
It’s pretty simple, of course and kids helping is easy. Mix everything together and crush up. I don’t suggest a food processor for this because you don’t want a hummus mixture. So just ask the kids to mush it up real well. Make into a patty size you want. After that, we oiled our pan for the first bunch and didn’t do it again afterward (and nothing stuck). These were fabulous with mashed potatoes and gravy and some good ol’ fashioned greens.
A bit of excitement for homemade pizza. This was our veggie one with squash, mushrooms, garlic and tomatoes. Our other was vegan Italian sausage and pineapple. Can you tell he's a bit thrilled?
