Thai Vegetable Soup

I don’t know why I call this a Thai soup. I have never been to Thailand, nor do I know much about the Thai cuisine. Maybe because a friend, who first tried it, said it reminded him of the soups he ate in Thailand. Or maybe because it has coconut milk, which is very typical of Southeast Asia.

Vegan Toffee

Simple but good, so I do share my newest invention: vegan peanut toffee.

VEGAN TOFFEE

Ingredients (for about half cup of toffee):

2 tbsp of maple syrup

3 tbsp of cane sugar

3 tbsp of vegan milk

1 tbsp of coconut oil

1.5 tbsp of peanut butter

1/2 tbsp of starch (optional)

a pinch of salt

Preparation time: 10 minutes (+ chilling)
