This was also on Windows 10, but not in the same place in the menu. When you open settings, just search for "typing" and click the "typing settings" search result. "Typing insights" is small, just below "learn how AI has helped you" (ugh) and you can turn it off from there. It was recent enough for both my husband (windows 10) and I (windows 11) that no data had been gathered yet.
