Solid wantanmen from a famous Sendai ramen joint
Kimchi Miso Soup (English)
Ingredients: (a) water (700 ml) (b) dashi (5 g) (c) kimchi (60 g) (d) minced pork (50 g sautéed with salt and pepper) (e) mung-bean sprouts (70 g) + Chinese chives (30 g) (f) miso (1.5 Tsp)
Preparation: 1. Combine (a) and (b) in a saucepan, bring to a boil. 2. Add (c–e) to saucepan. Bring to a boil. 3. Dissolve (f) in soup and serve immediately. NB: (a), (b), and (f) form the miso soup base; (c–e) impose the theme.
Soupe Miso au Kimchi (Français)
Ingrédients: (a) eau (700 ml) (b) dashi (5 g) (c) kimchi (60 g) (d) viande de porc hachée (70 g, sautée avec sel et poivre) (e) pousse de soja (70 g) + ciboulette chinoise (30 g) (f) miso (1.5 cuil. ā soupe)
Préparation: 1) Mélangez (a) et (b) dans une casserole, portez à ébullition. 2) Ajoutez (c–e). Portez à ébullition. 3) Ajoutez (f). Servez immédiatement. NB : (a), (b) et (f) forment la base de la soupe miso ; (c–e) dictent le thème.
Gomoku Ankake Sauce (English)
Ingredients:
a. thinly sliced pork (100 g) + sake + soy sauce + cornstarch; b. minced ginger (10 g); c. mixed frozen seafood (50 g); d. sliced scallion, carrot, bamboo shoot (50 g each); e. Napa cabbage (100 g); f. wood ear mushrooms (20 g); g. quail eggs; h. soy sauce (50 ml) + sake (50 ml)+ water (200 ml) + sugar (1 tsp) + oyster sauce (1 Tsp); i. cornstarch (20 g) in water.
Instructions:
1) In wok with oil over high heat, stir fry a-g in succession until just cooked (about 5 min).
2) Add h and bring to a boil.
3) Thicken with i.
4) Pour over noodle or rice of choice.
Sauce Gomoku Ankake (Français)
Ingrédients:
a. viande de porc (100 g) + saké + sauce de soja + maïzena; b. gingembre (10 g); c. fruits de mer surgelés (50 g); d. ciboule, carotte, bambou (50 g chaque); e. chou chinois (100 g); f. oreille de Judas (20 g); g. œufs de caille; h. sauce de soja (50 ml) + saké (50 ml)+ eau (200 ml) + sucre (1 cuil. à café) + sauce d'huître (1 cuil. à soupe); i. maïzena (20 g) + eau
Instructions:
1) Faites sauter successivement a-g dans un wok huilé à feu vif (~5 min).
2) Versez h dans le wok.
3) A l’ébullition, faire épaissir la sauce avec i.
4) Versez la sauce sur nouille ou riz.
