Corn Maque Choux is a traditional Southern dish. This vegan version changes traditional ingredients like bacon to a tasty mix of vegetables and spices.
Ingredients: 4 cups corn kernels. 1 tablespoon olive oil. 1 onion, chopped. 1 bell pepper, chopped. 2 cloves garlic, minced. 1 cup cherry tomatoes, halved. 1 teaspoon smoked paprika. 1/2 teaspoon cayenne pepper. Salt and pepper to taste. 2 tablespoons chopped fresh parsley.
Instructions: Set a pan on medium heat and add the olive oil. Cumin, bell pepper, and onions should be added. For about 5 minutes, or until softened, saut. Add the corn kernels and cook for five more minutes. Smoked paprika, cayenne pepper, salt, and pepper should be added. Add three to four more minutes of cooking. Cut up the parsley and add it after taking it off the heat. Enjoy while hot!
