Instructions: Preheat the oven to 350F 175C. Grease and flour a 9-inch round cake pan. In a large bowl, combine the flour, almond meal, sugar, poppy seeds, baking powder, baking soda, and salt. In a separate bowl, whisk together the almond milk, applesauce, coconut oil, vanilla extract, almond extract, and apple cider vinegar. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix. Pour the batter into the prepared cake pan and smooth the top. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Remove from the oven and let cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely.
