This Quinoa Vegetable Egg White Scramble is a tasty and healthy way to start the day or have brunch. It is full of protein and vegetables. There are lots of different vegetables, quinoa, and fluffy egg whites in it, which makes it a filling breakfast.
Ingredients: 1 cup cooked quinoa. 1 cup diced mixed vegetables e.g., bell peppers, onions, spinach. 6 egg whites. 1/4 cup low-fat cheese optional. Salt and pepper to taste. 1 tablespoon olive oil.
Instructions: Heat olive oil in a skillet over medium heat. Add diced vegetables and saut until they start to soften, about 3-4 minutes. Stir in cooked quinoa and continue to cook for another 2-3 minutes. In a bowl, whisk together egg whites, salt, and pepper. Pour the egg white mixture over the quinoa and vegetables in the skillet. Gently scramble the eggs with the quinoa and vegetables until the eggs are fully cooked. If desired, sprinkle low-fat cheese on top and cover the skillet until it melts. Serve hot and enjoy!
