Period cravings on keto don’t even faze me anymore because of the awesome “desserts” you can make.

Keto Chocolate Chip Cookies :’)
Feel free to adjust because I half-assed this (with delicious results):
1/3 cup coconut flour
4 tbsp butter (coconut oil would work)
2 eggs
½ oz unsweetened baker’s chocolate, chopped
Dash baking powder, salt
Liquid sweetener: I used several pumps of sugar free cinnamon dolce syrup, around 4 tbsp. You could also dissolve/dilute some xylitol, erythritol, or stevia in some water according to taste + some vanilla extract.
How to make the damn things:
Mix wet ingredients well, then mix in the dry, and then fold in the chopped baker’s chocolate. If mixture is too runny, wait for the coconut flour to absorb some moisture and it will thicken rather quickly. If it’s too thick, add a bit of water. You want the consistency to be “scoopable” but not too dry/gritty.
Spoon onto a baking sheet and bake at 350F for ~20 minutes, until browned. (These do not spread/flatten so shape them before you bake)
Makes 9 medium-ish cookies, less than 1.5g net carb each :D

Cheesecake with Cookie Crust
Ingredients:
Crust
6 Tablespoons Almond Flour
2 Tablespoons unsalted butter
1 tsp Pure Vanilla Extract
½ tsp Baking powder
¼ Cup Swerve Sweetener
2 Egg Yolks
2 Tablespoons Sugar Free Chocolate Chips
Cheesecake
8 ounces Cream Cheese
½ cup Heavy Whipping Cream
2 tablespoons Swerve (Powdered)
Directions:
Crust
Melt Butter in microwave add vanilla. Set aside
In another bowl, combine Almond flour, baking powder, and swerve and mix well.
Now add the butter and vanilla to your dry ingredients also add both egg yolks. Mix well!
Add Chocolate chips
Put the cookie mixture into a pie dish
Bake at 350 for around 7 minutes (keep a eye on it)
Cheesecake
Soften Cream cheese
Whip heavy Cream and put in the refrigerator
Combine powdered swerve and cream cheese. And fold in the Whipped cream.
Spread over cookie crust
Set aside in the fridge for a couple hours and voila.
Serves 6: 257 calories; 25g Fat; 4.9 Net Carbs
Easies tLow Carb Ice Cream - Strawberry Cheesecake Edition
Nutritional Information per 100g: 203 calories, 2g carbs, 20g Fat, 4g Protein
Ingredients (makes approximately 900g/1KG ice cream)
600ml Single Cream
300g full fat soft cheese
1tsp strawberry food flavouring (in lack of fresh strawberries, I would use 8 of them otherwise)
½ tsp xanthan gum
½ tsp lemon juice
40 drops liquid sucralose
Instructions:
In a big jug/bowl mix all ingredients except xanthan gum with a hand mixer.
Add the xanthan gum by sprinkling it while still mixing with the hand mixer and make sure it gets to a point where you see already it’s getting creamier.
Pour into ice cream maker bowl and churn for about 20 minutes, then let rest in freezer.
alternatively, if no ice cream maker is available you can pour the mixture into a freezable food container and place in freeer for about 4 hours, stirring it every 30 minutes or so to break down crystals and make sure the creamy texture of ice cream is maintained.

Coney Dog Chili Casserole
Ingredients:
1 lb ground beef
¼ c diced onion
1 tablespoon + 1 teaspoon of chili powder
½ teaspoon of cumin
Salt & Pepper to taste
1 teaspoon of yellow mustard
a few dashes of Frank’s Red Hot Sauce
8 oz of tomato sauce
4 all beef hot dogs sliced
2 eggs
½ cup of mayo
¼ cup of Heavy whipping cream
8 oz of shredded cheddar cheese
Directions:
Brown the ground beef and diced onion in a pan together. Drain off the excess fat (if you do not drain the fat the end result will have too much liquid).
Turn off the heat and return the meat mixture to the pan.
Mix in the tomato sauce, chili powder, cumin, mustard, hot sauce, sliced hot dog rounds, s&p and 4 oz of cheese.
In a bowl whisk together the eggs, then mix in the mayo, hwc and remaining cheese.
Place the meat mixture into a 9 x 13 casserole dish or a pie pan. Spread out the mixture evenly. Pour the egg mixture on top.
Bake at 350 for approximately 30 mins or until fully cooked. Let rest a 5-10 minutes before serving. Can be frozen.
I’ve tried making keto cake before and the result was a dry disaster compared to this miracle.
I’ve been schooled by the SO; he made this chocolate cake using the ruled.me recipe and it is the BEST keto cake I’ve ever had. The result was en pointe for taste and it satisfied that cake-craving I get sometimes when I’m running the lchf lifestyle.
Psylium husk may be a miracle ingredient; I think more research is needed.
Used the cauliflower pizza base again to make a pesto mushroom tart for dinner. Ridiculous. 😋❤

Flourless low carb peanut butter cookies
This is the typical recipe you see for flourless peanut butter cookies but with part of the peanut butter replaced with cream cheese, as I saw some complaints of dryness with the original recipe. I’ve never tried the recipe without cream cheese but these are moist and delicious!
Ingredients:
3/4 C peanut butter
2 oz cream cheese
1 C erythritol/xylitol (i used half and half)
1 egg
1 tsp baking soda
Directions:
preheat oven to 350F
combine peanut butter, cream cheese and sugar alcohols in a food processor.
add egg and baking soda.
roll into balls for baking— i got 17.
bake for 12 minutes.
for 17 cookies, macros are 106 cal, 8g fat, 3g protein, 2g net carbs. obv dependent on brands.

These are the sharp cheddar fried cheese sticks I talked about making in this post a few moments ago. They turned out superb! <3 I was so worried not knowing how the sharp cheddar would melt, as I’ve only ever seen people use pale cheeses in cheese sticks (gouda, mozzarella, and monterey jack). Needless to say I am 100% satisfied AND excited that with it being cheddar, the fat is higher than it would be had I used mozzarella sticks (though I think it’d be fun to make I bunch of different kinds- sharp cheddar, colby jack, mozzarella, etc.)
The double battered crust is super crunchy and delicious, the inside was melty- however NOT stretchy like mozzarella, it was just super soft and melty like fondue inside so it was an awesome contrast to the crust.
The ‘marinara sauce’ for dipping IS keto friendly in small portions, has no nasty additives, preservatives, or added sugar- and there is only 1/8 cup worth in this pic. It was for my son to dip the cheese sticks into- but neither of us ended up using it. Hahahaha.

My vanilla ice cream: *3 vanilla beans *3 cups heavy whipping cream *1 cup unsweetened vanilla almond milk *sweeten to taste (I used 10 drops stevia glycerite and 1/4 cup erythritol) -scrape the teeny tiny beans out of the vanilla pods. -add all ingredients and blend with an immersion blender or in an actual blender -let chill in freezer for 30 min before putting in ice cream maker. **Makes ten 2-scoop servings

Maria Emmerich’s Fudge Cookies BUT I made the following changes to the cookies… *3/4 cup cocoa powder instead of 1 cup *1Tbsp psyllium husk powder *1/2 tsp baking powder *I switched up the extracts and instead of using vanilla I used 1 tsp orange extract and 1 tsp coffee extract.

Slow cooker balsamic chicken with cauliflower mash
I really should use the slow cooker more often. This was a super easy meal
8 boneless skinless chicken thighs (I used frozen) 1 can diced tomatoes Sliced onion 2 crushed garlic cloves 1 heaping teaspoon each of basil, thyme, rosemary & oregano Salt & pepper Balsamic vinegar to taste (I used a half cup but your carb limit for the day may mean adding less)
Dump everything into the slow cooker/crockpot. Cook for 6 hours on medium high
I experimented with xanthan gum for the first time to thicken the sauce…a little goes a long way

yields 10-12 muffins per muffin: 132Kcal, carbs 7g, protein 16g, fat 5g
Ingredients:
Quark/ curd cheese - 500g
Cream cheese- 200g
Mozzarella - 1
Eggs- 4
Xylitol - 3 Tbsp
Vanilla
Blueberries - 100g
Directions:
Mix all ingredients except blueberries.
Pour the batter into muffin molds.
Put blueberries on top.
Bake for 45 minutes at 180°C.
Turn off the oven after 45 minutes. Don’t open the oven door before muffins have completely cooled.
