It’s probably because english doesn’t *have* anything else to say! I like you and I love you are practically interchangeable–even if people usually use “I like you” platonically, people still say “I like you” in romantic settings too, and lots of people say “I love you” to friends (as they should). The language just lacks the more “gut-punching” way to say “I love you”, but *how* you say it can be just as powerful

I would like to suggest that the English version of things like “te amo” and “aishiteru” and “ich liebe dich” would be “I adore you.” It’s not something you’d say to a friend, and it has a deeper connotation than just “I love you.”
