A delicious twist on the classic grilled cheese, this spinach and artichoke panini is packed with flavor and gooey melted cheese.
Ingredients: 2 slices bread. 1/2 cup chopped spinach. 1/4 cup chopped artichoke hearts. 1/4 cup shredded mozzarella cheese. 2 tablespoons grated Parmesan cheese. 2 tablespoons cream cheese. 1 tablespoon mayonnaise. 1 clove garlic, minced. 1 tablespoon butter, softened.
Instructions: In a bowl, mix together spinach, artichoke hearts, mozzarella cheese, Parmesan cheese, cream cheese, mayonnaise, and minced garlic. Spread butter on one side of each slice of bread. Spread the spinach and artichoke mixture evenly on the unbuttered side of one slice of bread. Top with the other slice of bread, buttered side facing out. Heat a panini press or skillet over medium heat. Place the sandwich in the panini press or skillet and cook until the bread is golden brown and the cheese is melted, about 3-4 minutes per side. Remove from heat, slice in half, and serve hot.
