Ingredients: 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces. 2 tablespoons vegetable oil. 1/2 cup orange juice. 1/4 cup soy sauce. 1/4 cup brown sugar. 2 cloves garlic, minced. 1 tablespoon ginger, minced. 1 tablespoon cornstarch. 1 tablespoon water. 1 orange, zest and juice. 1 red bell pepper, sliced. 1 green bell pepper, sliced. 1 cup broccoli florets. 1/2 cup sliced carrots. Cooked rice, for serving.
Instructions: In a small bowl, mix together orange juice, soy sauce, brown sugar, garlic, ginger, and the zest and juice of one orange. Set aside. In a separate small bowl, dissolve cornstarch in water to create a slurry. Set aside. Heat 1 tablespoon of vegetable oil in a large skillet or wok over high heat. Add the chicken pieces and stir-fry until they are cooked through and slightly browned. Remove the chicken from the skillet and set aside. In the same skillet, add the remaining 1 tablespoon of vegetable oil. Add the bell peppers, broccoli, and carrots. Stir-fry for about 3-4 minutes until the vegetables are tender-crisp. Return the cooked chicken to the skillet and pour the orange sauce over the chicken and vegetables. Stir well to coat everything in the sauce. Pour in the cornstarch slurry and continue to cook, stirring, until the sauce thickens and coats the chicken and vegetables. This should take about 2-3 minutes. Serve the Orange Chicken Stir Fry hot over cooked rice.
