Tuna Avocado Sushi Cups are a tasty change from regular sushi rolls. These tasty little treats are made with fresh tuna that has been marinated in soy sauce and sesame oil. They come in a cup and are served with creamy avocado and seasoned sushi rice.
Ingredients: 1 cup sushi rice, cooked. 2 tablespoons rice vinegar. 1 tablespoon sugar. 1/2 teaspoon salt. 2 ripe avocados, diced. 1/2 pound fresh tuna, diced. 2 tablespoons soy sauce. 1 tablespoon sesame oil. 1 tablespoon sesame seeds, toasted. 1/4 cup chopped green onions. 1 tablespoon pickled ginger, minced. 1 tablespoon wasabi paste. Nori sheets, cut into small squares. Sriracha sauce optional.
Instructions: Mix rice vinegar, sugar, and salt in a small bowl until the sugar and salt are gone. Pour over the cooked sushi rice and mix it together gently. Wait for it to cool down. Put diced tuna, soy sauce, sesame oil, sesame seeds, green onions, and pickled ginger in a different bowl. Roll the tuna around gently to coat it. Put a small square of nori at the bottom of each sushi cup before putting them together. Put some avocado cubes on top of the nori, and then add some seasoned sushi rice on top of that. Put some marinated tuna on top of each cup. If you want, you can drizzle it with wasabi paste and sriracha sauce. Add more green onions and sesame seeds as a garnish. Serve right away and enjoy!
