This beet pasta mushroom tortellini recipe combines the earthy flavors of mushrooms with the vibrant colors of beet pasta. It's a delightful dish that's perfect for a special occasion or a cozy dinner at home.
Ingredients: 1 package beet pasta sheets. 1 cup fresh mushrooms, finely chopped. 1/2 cup ricotta cheese. 1/4 cup grated Parmesan cheese. 1 egg, beaten. Salt and pepper to taste. 1 tablespoon olive oil. 2 cloves garlic, minced. 1/2 cup vegetable broth. 2 tablespoons butter. Fresh parsley for garnish.
Instructions: In a mixing bowl, combine the finely chopped mushrooms, ricotta cheese, grated Parmesan cheese, beaten egg, and season with salt and pepper. Mix well to create the filling. Lay out the beet pasta sheets and cut them into 3-inch squares. Place a small spoonful of the mushroom filling in the center of each pasta square. Fold the pasta squares in half diagonally, forming triangles. Press the edges to seal the tortellini. In a large pot of boiling salted water, cook the tortellini for about 2-3 minutes or until they float to the surface. Drain and set aside. In a large skillet, heat olive oil over medium heat. Add minced garlic and saut for about 1 minute until fragrant. Pour in the vegetable broth and bring it to a simmer. Add the cooked tortellini to the skillet and cook for an additional 2-3 minutes, allowing them to absorb some of the broth. Stir in the butter and continue to cook until the tortellini are coated in a creamy sauce. Serve the beet pasta mushroom tortellini hot, garnished with fresh parsley. Enjoy your delicious homemade tortellini!
