Ingredients: 2 cups gluten-free rolled oats. 1 cup creamy peanut butter. 1/2 cup honey. 1/2 cup unsalted butter, softened. 1/2 cup packed brown sugar. 1/2 cup granulated sugar. 2 large eggs. 1 teaspoon vanilla extract. 1 teaspoon baking soda. 1/2 teaspoon salt. 1 cup gluten-free chocolate chips. 1/2 cup raisins. 1/2 cup chopped nuts such as almonds or pecans.
Instructions: Preheat the oven to 350F 175C and line a baking sheet with parchment paper. In a large mixing bowl, cream together the peanut butter, honey, softened butter, brown sugar, and granulated sugar until smooth and well combined. Add the eggs and vanilla extract to the bowl and mix until fully incorporated. In a separate bowl, whisk together the gluten-free rolled oats, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing well after each addition. Fold in the gluten-free chocolate chips, raisins, and chopped nuts until evenly distributed in the cookie dough.
