These Hidden Veggie Paleo Brownies are a delicious and nutritious treat that sneak in some extra veggies without sacrificing taste. The grated zucchini adds moisture and a fudgy texture to these indulgent brownies, making them a guilt-free dessert option.
Ingredients: 1 cup zucchini, grated and squeezed dry. 1/2 cup almond butter. 1/4 cup honey. 1/4 cup unsweetened cocoa powder. 2 tablespoons coconut flour. 1/4 cup dark chocolate chips Paleo-friendly. 1/2 teaspoon baking soda. 1/2 teaspoon vanilla extract. Pinch of salt.
Instructions: Preheat your oven to 350F 175C and line an 8x8-inch 20x20 cm baking pan with parchment paper. In a blender or food processor, combine the grated and squeezed-dry zucchini, almond butter, honey, cocoa powder, coconut flour, dark chocolate chips, baking soda, vanilla extract, and a pinch of salt. Blend until the mixture is smooth and well combined. Pour the brownie batter into the prepared baking pan and spread it evenly. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean. Remove the brownies from the oven and let them cool in the pan for about 10 minutes. Using the parchment paper, lift the brownies out of the pan and allow them to cool completely on a wire rack. Once cooled, cut the brownies into squares, and enjoy!
